Our chickens are free to roam our property until finishing. We process here, as a family, after thanking each chicken for their gift to us. These chickens are all well loved, free to chase all the bugs, and are finished French style with raw milk from our own dairy herd.

Heard of French Bresse? It’s acclaimed to be the best tasting chicken in the world! Someone brought them over to America and so now we have a chance to taste them.
Bresse are an all white bird with beautiful red combs and blue legs. Sounds pretty perfect for America right (red/white/blue)?!
How do they compare to grocery store chicken or even homegrown Cornish cross?
They are a heritage breed! This means they breed true. Cornish cross are a terminal cross, meaning they are unable to reproduce. They are a four way hybrid, which makes for larger breasted chickens, with the cost of them having a hard time walking and often staying alive due to heart conditions.
Bresse birds do not have these medical issues! They can breed and have offspring, laying large brown eggs.
Do they taste like a Cornish cross?
Breese are smaller than a Cornish cross you’d get at the grocery store. This is typical with heritage meat. They are perfect for roasting, rotisserie or slow style cooking. What really makes the taste difference the finishing process of milk soaked feed for a few weeks before processing. This results in a marbled chicken that tastes moist and has the most schmaltz (buttery fat). Trust us!
Our favorite way to enjoy them has been on a countertop rotisserie with a simple coating of butter or oil, salt and pepper. Yum!! There is nothing drying about these chickens!!
